Tamarind, Honey & Ginger BBQ Sauce

Tamarind, and ginger BBQ sauce. I dream and reimagine flavors where East meets West. This BBQ sauce is so so good and has bold flavors perfect for your summer grilling. The sauce is thick and syrupy, a bit sweet, tangy, a bit spicy and just finger lickin good .. I tested this BBQ sauce on so many things and oh it’s so good even on fruits. Try my oven roasted salmon its so perfect for a weeknight meal and beautiful enough for company.

MAKES ABOUT 1 CUP

Ingredients:

2 tablespoons olive oil

4 garlic cloves minced

1 onion, diced

2-inch piece of ginger, peeled and finely diced or grated

1 teaspoon kosher salt

1/2 teaspoon ground allspice

1/2 tsp black pepper

1/2 tsp smoked paprika

1/2 tsp garlic powder

1 tsp red pepper flakes (optional)

1 bay leaf

2 tbls Tomato paste

2 tbls Honey

3 tbls tamarind concentrate

1 cup water

Directions

1. Heat the olive oil in a saucepan over a medium heat. Add the onions, garlic, ginger, and salt and let cook for 5- 8 minutes until translucent.

2. Add all the spices and cook for another 3 minutes. Add the tomatoes paste and stir. Then add in the honey, tamarind, and bay leaf. Let it cook on medium-high, bringing the mixture to a gentle boil. Add the water to thin out. Then reduce the heat to low and let simmer for another 15 minutes, until thickened and syrupy. If sauce is too thick dilute with water adding 1 tbls at a time.

3. Turn off the heat and discard the bay leaf. Use an immersion blender to blend the sauce in the same pot to the consistency you like. Use with chicken, salmon, or vegetables.
